Homemade Baked Chicken Taquitos

Every Christmas I can look forward to a gift from my sister that I use year round and beyond. She makes a homemade cookbook where she has some “Tried and True” recipes.  Most of them are “light” meals that are pretty delicious and often good for you.  Of course, there are a few that sneak in that are just great tasting…but maybe not as good for you. 🙂
 
This was my second time making them and I changed it a little bit to fit the things I had in the fridge.  
 
1 package of chicken fajita precooked mix
3 oz cream cheese
1/2 cup of Pace salsa
garlic salt
1/2 cup of cilantro
1/2 cup Sargento Mexican Light cheese
1 pack of corn tortillas
 
 
 
Spray pan and heat oven to 450 degrees.
Mix all ingredients together in a large bowl.  You might need to heat the cream cheese for 20 seconds in the microwave to soften it.
Put mixture on the end of a warmed corn tortilla.  Heat the tortilla in the microwave for 30 seconds to soften.
Roll tortilla in taquito shape and place face down on cookie sheet.
Line up taquitos until all the of the mixture is used.
Bake in oven for 15 minutes.
Serve with salsa.
