The Start Of The Summer Of Fitness

So I have said goodbye to my classroom for another summer. It was a really hard year and it feels like a breath of fresh air ending a chapter of my tenth year of teaching. I have now dedicated this summer to My Summer of Fitness. I am so excited to get my fitness on and lose that ten pounds I gained this school year. Hello summer!

Gift Card Cash In!

One of my students gave me a gift card to Starbucks. Since I am not a coffee drinker, I knew it was either the oatmeal, wraps, or a strawberry frappuccino…so frap it was! Since its super hot out today it was worth the calories…love gift cards!

Stephanie’s Baby Shower

Stephanie is another science teacher at my job.  We both talked about getting pregnancy this year and she got pregnant pretty quickly. So the whole year we have gone through all the stages of pregnancy and it was so fun to watch her. 
Now that school is ending, she is getting ready to have the baby so we held a shower for her.  Here she is with her presents.

Cody’s Birthday

Cody invited all the girls out for her birthday at Olive Garden.  What a great idea!  We all have been so busy with things going on in our lives that we needed to take a little breather.  Here is the group.  Most of us play volleyball together. 
 Cody was excited because she go a Happy Birthday from Abe on her facebook!

Bad Luck on the Bike

Last week Mike was riding with some friends on a road ride and a car turned in front of the group.  They all had to brake on their bikes and another rider hit him. Poor Postal Service bike was gone.
The plan was to sell our Lexus and use it on a new bike. 
So we bought a new bike and it came in on Friday.  Mike went on his first ride Saturday morning a day later, this is what it looked like:
 It snapped.
 What a good looking bike.  If you look closer, you can see the rear art of the frame broken off.  Again, the bike was rear ended.
 Thank you Trek for warranties.

Thai Delight

Inside this styrofoam box is a delightful treat.  Every night before a big race, Mike and I run to our local thai restaurant to eat.  We think that it holds the secret to race endurance….or we are just trying to find some excuse to eat extra calories.

Does anyone have a really good recipe for Chicken Pad Thai?  I love the flat noodles and the spice. 

 

 

12 Hours In The Old West

Well, we did it again.  Another 12 hour race in the books under the name “Lady Cluck and the Boys”.  We drove about two hours north of Las Cruces to the town of Ruidoso, New Mexico.  It’s a resort town with mountain bike trails, snowboarding, horseback riding, and casinos (makes me feel like home..hehe).   

We stayed at a cabin off the main street, down the street from an awesome Schlotzsky’s (which they don’t have in Las Cruces).  I had a turkey and avacado sandwich and a cup of Boston Clam Chowder.  We ordered some Cinnabon (YUM!) for our race day sugar rush we needed.

We had to hurry back to the cabin to prep all the bikes and to get some sleep!

I was so ready for bed!   P.S.  Yes, I wore a hoodie to bed because it was VERY cold in the cabin and it took a long time for the heater to kick in.

Safire has seen some good times and bad times on the race coarse.  The huge thing with her is that her shock has been acting up and getting really “squishy” (I just need to get a new one.) and so I have to pump it up the night before and right before the race.  Also, my big problem I have is seat height.  I tend to ride with my seat a little too low, so I adjusted the seat a little higher to see if anything improved.

This is a little bit out of order and it leaves no room for suspense, but can I tell you how tight our race was?? We raced four man co-ed and were planning on being the only team, until we found out that three other teams had signed up.  We are actually standing in order from left to right on how we went out on our laps.  Wayne was first and our fastest rider with 48-49 minute laps, Mike was second and he was hitting 53-56 minute laps, I was third with 1 hour laps, and Brent was fourth with 59 minute laps.  We followed that order until the final lap. 

Red Bull sponsored the race, so we had to represent by getting pictures with some Red Bull.  Energy drinks, Sportslegs, and some good old fashioned sugary foods are great fuel for an endurance race like this one.  I’ll be honest, after a while you get pretty sick of it, and all you want to do is drink water. 

The tradition shot of Mike and I riding by the Red Bull tent.  Our Christmas card last year was the picture of us riding under the Red Bull arch, so it is now tradition for us. 🙂

Mike was nice enough to walk up to the last part of the 11 mile loop and take a picture of me coming in on my lap.  This part is right after a little downhill, technical part through the trees and you start hearing the music from the parking lot and it gets you so pumped.  I was a lot faster on this part than last year, thanks to Cloudcroft, which prepared me for rocks and roots.

Once we hit the finish line, we would head back on the coarse to our parking spot and trade off there. It was really nice to have a spot right next to the trail.

I am super excited to finally get a first place in a 12 hour race.  This is my first one and I owe it all to the boys.  What happened was when it was time for my final lap, we were only four minutes ahead and the second place team was going to send out their fastest person (we may have eavesdropped a little…), so I told Wayne to go again and that sealed the deal.  I felt guilty about the whole situation, but after thinking about it, there are a lot of things that are involved with a 12 hour race and STRATEGY is one of them.  The last lap is the most crucial and if you are planning to place, you need to play your fastest rider.  I highly recommend this for any team in upcoming races.

Imitation Crab Recipe


I was looking for some recipes to use with imitation crab because we had some sitting in the fridge for a few days.  The only problem was that I didn’t want to make seafood salad, which I learned to make an awesome salad courtesy of my days at Hogi Yogi.
I went to cooks.com and looked up some ideas and they had recipes for casseroles.  So I took this recipe: Imitation Crab Casserole and gave it a few more ingredients, like fresh mushrooms, yogurt, and a little cream cheese.  It wasn’t that bad!

May 2012 Issue of Glamour

Lauren Conrad is my absolute favorite fashionista.  I rarely have in mind someone who I admire.  People always ask “Who is your favorite actress?” and I never have an answer.  I would say that I absolutely love Lauren’s style.  So of course, any time she is on a magazine I buy it, so I picked up  copy of Glamour for May when I saw she had an article!
 I also have her on facebook and she puts great ideas on her blog.  Today she had this idea:
I put the plan on my wipeboard in my room and I am going to see if I can do it!

Monday Catch Up!

I’m really trying to blog as much as I can on here, but with working full time and a lot of riding and errands this weekend, I got a little behind on what I wanted to do.  I started off this morning with some Overnight Oats that I got from the Peanut Butter Fingers.  She usually adds banana or strawberries to it and it really makes a difference.  I really love strawberries, and I used honey strawberry greek yogurt to flavor it a little more.  I like snacking on it too.
 
Tonight for dinner, I made some chicken with some Trader Joe’s Island Soyaki marinade on it.  We are pairing it with some brown rice.  Mike and I used to eat salmon and brown rice ALL THE TIME when we first got married, so it brought back memories busting out the Uncle Ben’s brown rice again.
 
 
I wasn’t able to get a ride workout in tonight since I got home from work too late, so it will be a one mile run around the neighborhood with Barney and then some of this:
