About thefasteryoupedal

Hi! I'm Liz and I am a 38 year old teacher from Las Cruces, New Mexico. I'm also a fan of mountain biking, road biking, running, and traveling. I'm always up to try something new! This blog is for me to share ideas and also to receive new ideas!

Family In Town

Mike is one of ten kids in his family.  His mom and dad just celebrated their 50th anniversary, so all the kids have come down for a reunion.  That means LOTS of family in town and not a lot of time at home.

My dad and stepmom came into town too to join in on te awesome festivities.  We already partook of a 9:30pm screening of “The Amazing Spiderman” the day before it came out (thank you to friends who own the theatres in town) and now we are off for some White Sands fun tonight. I can’t wait to post pictures of Barney’s first time there.

My dad really likes Cracker Barrel so we had to go for nostalgic reasons.  Remember this game?   You jump the pegs to see how many you have left over.  I am terrible at it!

Barney has been excited to have more attention because of all the people.  Before that, Frog was his only companion.

Riley is Barney’s cousin.  He likes to watch America’s Funniest Home Videos and becomes glued to the screen if it’s on.

Mike and I have been trying to continue with our biking workouts.  We’ve been very lucky to get them in between the schedule and heat.  Mike prepared for a time trial he did and did very well in it.

I’ve been running a lot more thanks to all the 5k’s and half marathons coming up.  It’s been tempting to do a whole marathon so I am hoping to get conditioned one day for that.

I have found an awesome reduced fat meal at Trader’s Joes.  Go get it!

So good!

Question:  Any favorite things that you like to get at Trader Joe’s?  Do you have any meals you like to get that are good for you?

Drop Dead Healthy

So I am finishing up this book tonight and wanted to give my two cents on it, in case anyone was wondering about it.  I saw it in Barnes & Noble when I was looking for “how to” books, that I am somehow addicted to right now.  I also kept seeing it pop up in my Fitness and Shape magazines too.  Advertising does work!  Then a blogger that I follow used it as her June Book Club book, so I figured I may as well see what it’s all about.

Like I said, I am really into “how to” books, so this book actually intrigued me. The author spends two years of his life using techniques that people use to be healthier in ALL aspects of life. Some of the techniques to be healthier were a little strange, like running barefoot or wearing “sound proof” headphones around the house, but I recognized a lot of the things he tried out that I have been reading in fitness magazines and health books.  Being a science teacher, I like how each chapter focuses on a “body system”, like the chapter on the immune system and the amount of time to hand wash or the whole chapter on the stomach where he focused on being aware of his own chewing for digestive purposes.  My kids always ask me ideas on how to take care of themselves, so this book gave me some ideas.

I admit is was a little overwhelming.  I don’t know how he spent two years and was able to keep everything straight and organized.   He was “real” in the sense that he slacked on things and I liked all the humor he used to tell stories.  All in all, he pretty much tried every diet, fad, exercise class, doctor’s advice, or whatever people suggested.  When I got about mid-way through the book, I started jotting down things I liked and then pretty much skimmed through the things I thought were ridiculous.  I could see some people getting bored with it, but since I’m really into trying new ideas, I was excited to make a list of things I could work on.

Things I liked: using tiny amounts of salad dressing or no dressing on salads; 60 minutes of exercise a day; setting out gym clothes the night before a workout to motivate; drink a gallon of water a day; get 7 hours of sleep a night; stand and walk around the house more often than sitting (I often type on my laptop from the counter.); more than 30 grams of fiber intake a day; drinking water with lemon; have one girls day a week (social health); learn a new language; floss daily; get a dermatologist appointment…pronto!; be aware of my chewing; etc..

Honestly, I don’t know how to review this book. I would recommend it to anyone who is trying to think of ideas of how to be healthier.  I don’t think you would want to do EVERYTHING, but it explains concepts that people believe in and then you can take it from there.  Pretty much it got me to be more aware of certain parts of my body I never thought needed exercise, like my brain.

I could also see people not liking it very much, because it doesn’t have a “story” in it (even though he used his grandfather’s life as a storyline a lot).  If you were to read it and lose attention, I would again recommend scanning the book.  It definitely reminds us how big the health industry is and all the people out there (including myself) that are desperate to find healthy things to do to improve our bodies.  It’s funny how we all are fighting every day to start good habits and break the bad habits we have.

That is my life in a nutshell.

Question: Did anyone read the book?  What did you think of it?

Let’s Play Catch Up!

Things have been a little hectic around the house lately that I sort of dropped away from blogging for a week.  Mike and I had something sad happen in our lives, but are now ready to move on and be happy.  (Sorry for being vague, for as much as I blog, you think I would be blabbing about everything.  I like being private about some things though.)

I really am lucky to have a great friend for a husband.  We went on Tuesday Night Ride last night. In Las Cruces, on Tuesday nights, all the local mountain bikers come out to the Dona Ana’s and the parking lot gets full of bikes, bbq, and people hanging out. It’s so fun to see everyone and mountain bikers are so friendly.  I feel like they are my second family.  We really are, since we see each other at all the races!

I’ve been still working on the Summer of Fitness and really feel like that I am getting the workouts down.  I do my “Two A Days” and I’m training for some upcoming races in running and biking, so it should help.  I really think diet is the key thing, so that’s my weakness right now that I am working on. Eat less sugar, fat, and carbs, and add on the protein.  I’m avoiding sodas and late night eating too.  It’s hard stuff!

So we bought some sparklers.  I LOVE the fourth of July.  My dad is specifically driving here for the fourth because we go a little crazy with the fireworks.  Last year, Barney got freaked out and ran away (which was the scariest thing), so we are trying to get him used to it.

This was his first reaction.  Scared to death!  Here is what happened next.

He turned evil!  My cute, little dog turns into a monster!  He hates them! Needless to say, he will be hanging out in the house on the Fourth this year.

P.S. Trader Joe’s peaches…..are delicious.  Add some Cool Whip Free and it’s a great dessert!

Question: What is your favorite summertime fruit to eat? Any good recipe ideas?

My Heroes

I picked up my latest copy of Fitness Magazine over the weekend and noticed it was an Olympic Games issue.  I love the Olympics!  Four years ago, Mike and I were dating long distance and it was a fun way for us to get on the phone and cheer on people we were going for.

These two awesome athletes are in their 30’s and still going strong.  Kerri Walsh (on the left) has two little girls and plays for the Olympic Women’s volleyball team.  Hope Solo (on the right) plays for the United States Women’s Soccer Team.  I love how they don’t let age stop them and they both are in such great shape.  It makes me so pumped to go out and be more healthy in my thirties than I was in my twenties.

Question:  Which Olympic events are you looking forward to this summer?

I just got done running the dog in the heat and now off to hopefully get my sink done today!

Goodbyes, Bikes, and Sinks…

I have always been terrible with goodbyes.  I had a roommate for a week about ten years ago, and she decided to move back to Texas.  I barely knew the girl and the day she left, I bawled my eyes out.  I am extremely worse with animals.

This is my class red eared slider (who has had so many names I can’t even remember its name) and she came home with me this summer along with four other animals.  She is the messiest eater and the dirtiest reptile I have had to take care of.  When you walk in the room, she gets really excited and swims to the side of the cage and goes crazy.  The problem is, I would have to change her 20 gallon tank once a week.  After going through three filters, I couldn’t do it anymore. Long story short, I found a sanctuary for her.  When I took her, I was really sad.  I stood there for 15 minutes watching her swim around.  Thankfully, I held my composure, but I hate to say it, I cried a little in the car on the way home.

I am such a softie for animals.  This is why I could never work at a vet or zoo.  I would take ALL of the animals home with me.

Meanwhile, I dusted off the mountain bike and took it out for a Tuesday night ride.  I’ve been preparing myself mentally for a time trial in a few weeks, so I’ve been dissing Safire (the name of my mountain bike).  It was so fun and beautiful out!  I’m starting to feel better after the terrible 12 pound weight gain my job created for me this year.

There was a beeeaautiful sunset that night.  Only in New Mexico.

Last situation of the week, my kitchen sink.  In the last year, our microwave, garbage disposal, and dishwasher have died on us.  I woke up yesterday and turned on the kitchen sink and got sprayed in the face like in the cartoons when they are playing practical jokes on each other.  No, the joke was that the sink was next to go.

So here is what my kitchen looks like now. I never realized how much I use a kitchen sink until we’ve been without one!

I love how Barney has to be part of things.

P.S. Leftover pulled pork with mushrooms on a mini tortilla pizza.  Good stuff.  Trader Joe’s Roasted Garlic Marinara Sauce makes an excellent pizza sauce!

Question: Have you ever had to say goodbye to a pet?  How did you handle it?

We Meet At Last!

Barney has this routine every Sunday when we drive over to Mike’s parents house.  He will be perfectly normal until we hit the dirt road that turns off to their house.  Then he starts yelping like a hyena.  Near the road, there is a farm house with a dog that runs up and down the fence.  For some reason Barney gets extra loud and irritated at the dog.  Mike named the dog “Red” and every time we get near, Mike will say “You’re going down Red!” and Barney starts acting up, as if he knows the dog’s name is Red too.

Red and Barney have never formally met, occasionally passing by each other.  While playing in the irrigation ditch, Red made an appearance.  And they met face to face.

It was a lot less dramatic as I thought it would be.  Red growled, but Barney didn’t find it as entertaining to bark at him when he wasn’t in a car driving by.

Anyway, I have two products that I’ve tried that are really good!  I highly recommend them.  One is the Jamba Juice smoothie mix in the frozen food section.  We don’t have them here and I miss drinking them while walking around BYU campus.  Add some juice and you got some awesomeness.

I like to drink it for breakfast, but it would be good for a summertime treat too.

Another product is the Alternative Bagels.  The are low-calorie, whole wheat, and have a lot of fiber!! I usually just warm it up briefly in the microwave instead of toasting it and it tastes like a pretzel.  Good stuff!

You can find them in the refrigerated section at Walmart or Albertsons.  Off to work!

Superstitious Much?

Mike and I were talking today about superstitions.  Mike is severely superstitious, me not as much.  I like to do silly things like read my fortune cookie or occasionally look at my horoscope, but nothing really gets to me.  Mike is afraid to say anything out loud for fear “karma” will come back to bite him in the behind.  I don’t blame him sometimes.  It seems like bad luck is out to get him.

A few weeks ago Mike got a new road bike and put a picture of it on Facebook.  He said something to the extent of the “many miles” he would ride on it.  The next day.  It broke.  Poor guy.  Thankfully, it ended up working out that it was under warranty and here is his new bike.  So again, do you blame him?

I can say I have bad luck sometimes too.  Let’s just say the cheese grater won.

I was feeling really guilty today because I feel like my days are wasted unless I have some big project accomplished.  I got really jittery and needed to get out of the house and at least go to the gym.  I think it comes with working all year and then I start going through withdrawal.  I really would love to find some kind of job, but I am struggling with what could work with considering my schedule is a little busy the next couple of weeks.  I feel so useless though.

I pretty much looked like this all week.  Stuck in front of the compter.  Bun in hair.  UNLV shirt on.  No makeup.  I know I need to enjoy this while I don’t have any kids around, but it still is a little embarrassing.

Thankfully this week will pick up.  I have volleyball, interviews, a curriculum meeting, and then off to Vegas!

Question:  Have you ever had time off and felt guilt about it?  Also, do you have any superstitions?  If so, why?

A Change In The Weather

Ever since we came back from San Diego, this has been Barney’s permanent spot.  He somehow became even more obsessed with playing frisbee in the backyard.  If we even say the word “play” or “frisbee” in totally normal voices, he’ll immediately run to the door and look out.

He is extra annoyed in this picture because I refuse to keep on going out.  He would run his legs to bloody stumps if he could.  I told Mike when we are rich, that I am investing in a frisbee thrower.  (If they even have one.)

I am really excited to have my sister here in a couple of weeks so I can take her here to Pro Ranch Market.  I guess it’s always been a huge deal in New Mexico, but I had never even heard of it.  Basically, it’s really cheap.  And they play a lot of authentic Mexican music inside.  I actually feel like I am at EPCOT at Walt Disney World when I go in there for some reason.

Their produce is so cheap and very fresh!  I walked off with a basket load of cucumbers, onions, lettuce, apples, limes, green chiles, and carrots for around ten bucks!

After a workout at the gym this morning, where I ran into one of my students (which was embarrassing and happens a lot), I took care of some projects and then got ready for a ride.  Yes, I found my other pink sock.  It has been missing since San Diego.  Where did we find it? It had mysteriously slipped INTO one of Mike’s jersey pockets…how does that happen?

Anyway, as we were driving to the OCHO coarse in Picacho Hills, I noticed the sky looking a little green towards El Paso.  Then I got a notice on my phone for a sever thunderstorm warning producing 60 mph winds and hail.

I am showing the comparison of west versus east.  Notice the left hand side of the screen is super dark…yet it was so nice out towards the west.  Anyway, it made me a little nervous….but we rode anyway.  (I’ve had to pick up Mike in lightning storms where he refused to give up a ride.  Most of my close calls with lightning involve biking and the husband telling me not to be a wuss. 🙂 )

We ended up being ok, but cut the ride short mainly because of the wind.  And nothing happened.  So weird.  I like the change in weather though.  This usually happens in July, but we need it.  The last rainstorm we had was back in the beginning of May.

It was home to another night of Chicken Lettuce Wraps and then off to watch my shows.  Teaching rocks.

P.S. Coconut Lifewater is awesome.

Question: Have you had any close calls with lightning?

Barney and I got stuck in a lightning storm by ourselves in Cloudcroft when we got separated from Mike.  We ended up running/biking back five miles to the car in the soaking rain.  Good times.

Chicken Lettuce Wraps

I miss PF Changs.  The closest one to me is about 45 miles from here and its a little bit out-of-the-way.  I went to the farmer’s market on Saturday and saw these huge heads of lettuce and they reminded me of the lettuce wraps I dearly love from there.

Tonight I got a little hungry before watching the NBA Finals, and considering tomorrow is grocery day and we don’t have much in the fridge, I came across the lettuce and thought I would work with what I have and make some.

1 package of Tyson pre-cooked chicken (diced)

1 can of water chestnuts (diced)

1/2 container of mushrooms (diced)

 1 tbsp garlic salt

2 tbsp Trader Joe’s Soyaki Sauce

Dice and saute all the ingredients on medium heat for about 5 minutes.  Add a little juice from the water chestnuts to keep it moist.  Add more soyaki sauce if desired.

I made a sauce to pour on it to give it a little more flavor.  It included:

1/4 cup of sugar (dissolved in water)

1/2 cup of water

2 tbsp ketchup

2 tbsp soyaki sauce

1 tbsp mustard

1 tbsp tobasco (to give some kick)

It tasted great!  I would add a little more ketchup or chili sauce to the sauce for consistency, but the mushrooms and water chestnuts hold in so much favor!

Late Night Inspiration

So I am a HUGE fraidy-cat of the dark.  Lately, I can hardly sleep at night because I feel like our neighborhood sounds are extra loud at night.  Of course, the husband has to make fun of me about that, but it has caused me to sleep a little during the day, since I’m pretty much up awake during the night reading “how-to” books or brainstorming career changes or huge projects around the house.  The nice thing is that Barney is pretty good about being my companion.

I love this picture of Barney from the river a few days ago.  He has this crazed look on his face as he came running towards us.  Just so you know, he would not go near the other side of the flag for fear it was going to wave and attack him.  He has the same reaction to trash bags and random treats brought home to him.  He has his mom’s courage.

Anyway, I usually spend the evening watching all my DVR shows, including my favorite So You Think You Can Dance.  When I am done with my shows, I usually flip over to HGTV or Food Network.  I especially like this one show called “Restaurant Impossible”.  The host Robert Irvine is a great chef, who goes into restaurants and tries to save them from losing money.  He is pretty hard on them and usually ends up with people either really mad at him or crying as he has broken them down.  I especially like it when he inspects the place and tells them how terrible it is.

Yesterday’s episode was the White House Episode where first lady Michelle Obama put him to a test on a community center that needed a transformation.  She also challenged him to make a garden for the community so that the kids can pick and eat the vegetables.  No joke, after that episode, I was online for two hours looking up gardening tips.

This morning I got up and cleared out some weeds and now I am brainstorming how to make planters with these wooden boards we have in our garage.  I am trying to get this accomplished in the next two days.  I’ll keep you posted.

I do this all the time though, where something will trigger an idea in my mind and I sit for hours at night thinking about it.  Thankfully this occurred on a non-work night.  I’ve had nights where I have three hours left before getting up for work and I can’t shut off my brain!

So yes, I want a garden and I am going to try to keep it simple.  Happy gardening!

Question:  Any suggestions for a new gardener?  Have you ever had a “late night” inspiration?
